Ingredients
- 1 cup old-fashioned rolled oats (90 g)
- 1 cup milk, dairy or unsweetened oat milk (240 g)
- 1/2 cup plain Greek yogurt (120 g)
- 1 tablespoon chia seeds (12 g)
- 2 tablespoons maple syrup (30 g)
- 1 teaspoon vanilla extract (4 g)
- 1 teaspoon ground cinnamon (3 g)
- 1/4 teaspoon fine salt (1 g)
- 1 medium firm sweet-tart apple, divided and diced (180 g)
- 2 tablespoons chopped walnuts, optional (16 g)
- 2 tablespoons raisins, optional (20 g)
Instructions
- Mix liquids. In a medium bowl, whisk milk, yogurt, maple syrup, vanilla, cinnamon, and salt until completely smooth. Scrape the sides and bottom, checking that no dry cinnamon or thick yogurt streaks remain.
- Add oats and chia. Stir in the rolled oats and chia until every oat looks moistened. Rest the bowl for five minutes, then stir again, breaking apart any chia clumps settled along the bottom.
- Portion and chill. Divide the mixture between two 16-ounce jars or lidded containers, leaving room for toppings. Cover and refrigerate at least six hours or overnight, until thickened but still able to move when stirred.
- Dice apple. Just before eating, core the apple and cut it into even one-quarter-inch pieces. Leave the peel on for color and firmer texture, or peel it if you prefer a softer bite.
- Loosen oats. Stir each chilled portion from the bottom upward. If it seems too thick, add milk one tablespoon at a time, stirring after each addition until the oats are creamy, loose, and easy to scoop.
- Finish jars. Fold half the diced apple into each jar, then scatter the remaining apple over the surface. Add walnuts and raisins if desired, and serve immediately, or carry toppings separately for a crisp finish.
Notes
- This makes two generous jars. For smaller portions, divide the chilled base among three containers and distribute the apple topping evenly.
- Choose a firm apple that tastes good raw and holds its shape when diced; soft or mealy fruit will not give the same crisp contrast.
- For dairy-free oats, use unsweetened oat milk and thick plain dairy-free yogurt. After chilling, add milk gradually because yogurt brands vary in thickness.
