Ingredients
- 2 cups old-fashioned rolled oats (180 g)
- 2 cups milk, dairy or nondairy (480 g)
- 1 cup plain Greek yogurt (240 g)
- 2 medium firm apples, grated (300 g)
- 2 tablespoons chia seeds (24 g)
- 2 tablespoons maple syrup (40 g)
- 1 tablespoon lemon juice (15 g)
- 1 teaspoon ground cinnamon (3 g)
- 1 teaspoon vanilla extract (5 g)
- 1/4 teaspoon fine salt (1 g)
- 1/2 cup chopped pecans, for topping (55 g)
- 4 teaspoons brown sugar, optional (16 g)
Instructions
- Prep the apple. Wash and dry the apples. Grate them on the large holes of a box grater, stopping at the core. Measure 300 grams of loose shreds; do not press them into the measuring cup.
- Whisk the liquids. In a large bowl, whisk milk, Greek yogurt, maple syrup, lemon juice, vanilla, cinnamon, and salt until no yogurt lumps remain. The mixture should look smooth and pourable before the dry ingredients go in.
- Add oats and apple. Stir in the rolled oats, chia seeds, grated apple, and optional brown sugar. Mix for about 30 seconds, scraping the bottom and sides, until the apple shreds and chia seeds are evenly distributed.
- Fill jars. Divide the mixture among four 12-ounce jars, leaving room at the top for stirring and toppings. Seal the jars with lids, then set them on a level refrigerator shelf.
- Chill overnight. Chill for at least 6 hours or overnight. The oats should look hydrated and the mixture should hold softly on a spoon. If it seems thick around the edges, stir before adjusting the texture with milk.
- Finish and eat. Stir each jar thoroughly from the bottom. Add 1 tablespoon milk if needed, then top with pecans. Eat cold, or microwave without the lid for 45 seconds, stir, and warm briefly again only if you want it hotter.
Notes
- Use 12-ounce jars or larger; smaller containers leave too little room for stirring after the oats thicken.
- Grate apples immediately before mixing. Firm, sweet-tart varieties provide the clearest flavor and hold their texture better than soft, mealy apples.
- Keep pecans separate until serving. For a thinner texture, stir in milk 1 tablespoon at a time after chilling.
