Ingredients
- 1 cup old-fashioned rolled oats (90 g)
- 1 medium carrot, finely shredded (70 g)
- 3/4 cup unsweetened milk (180 g)
- 1/2 cup Greek yogurt (120 g)
- 2 tablespoons pure maple syrup (30 g)
- 1 tablespoon chia seeds (12 g)
- 1/2 teaspoon ground cinnamon (1 g)
- 1/4 teaspoon ground ginger (0.5 g)
- 1/8 teaspoon fine sea salt (1 g)
- 1/2 teaspoon vanilla extract (2 g)
- 2 tablespoons raisins (20 g)
- 2 tablespoons toasted pecans, chopped (16 g)
Instructions
- Prepare carrot. Peel the carrot and grate it through small box-grater holes. Measure the shreds after grating; they should look short and fine, not like long salad strands that resist a spoon.
- Combine dry ingredients. In a medium bowl, stir oats, chia, cinnamon, ginger, salt, raisins, and half the pecans. Mixing these first spreads the spices evenly and keeps a cinnamon-heavy pocket from settling in one jar.
- Add liquids. Add grated carrot, milk, yogurt, maple syrup, and vanilla. Stir thoroughly, scraping bottom and sides, until yogurt disappears into the liquid and every oat is moistened. The mixture should still look loose now.
- Portion jars. Divide evenly among four lidded jars or containers, leaving space at the top. Press the oats lightly below the liquid with a spoon, then scatter remaining pecans on top or reserve them separately for crunch.
- Chill. Cover and refrigerate at least 6 hours or overnight. The oats and chia should absorb the liquid, and carrot threads should soften. Before serving, stir from bottom upward so any settled liquid returns through the jar.
- Adjust and serve. Taste a chilled portion and stir in milk, one teaspoon at a time, only if it seems too thick. Serve cold with cinnamon, raisins, or pecans. For warmth, microwave an uncovered jar for 45 seconds, then stir well.
Notes
- Grate the carrot finely and measure after grating. Packaged shreds can work when chopped, but they remain more noticeable than fresh, small-hole shreds.
- For dairy-free jars, choose plain dairy-free yogurt and unsweetened nondairy milk. Yogurt thickness varies, so add one extra teaspoon chia only when chilled oats seem loose.
- Pecans soften in the mixture. Store them separately until serving whenever a distinctly crunchy topping matters most.
