Peanut Butter Overnight Oats That Stay Stirrable

These creamy peanut butter overnight oats use yogurt, chia, and a deliberately loose milk ratio to hydrate overnight, then remain easy to stir, scoop, and customize in the morning.

Ingredients
- 1/2 cup old-fashioned rolled oats (45 g)
- 1/2 cup milk, dairy or nondairy (120 g)
- 1/4 cup plain Greek yogurt (60 g)
- 2 tablespoons creamy peanut butter (32 g)
- 1 tablespoon chia seeds (12 g)
- 1 tablespoon maple syrup (20 g)
- 1/2 teaspoon vanilla extract (2 g)
- 1 pinch kosher salt (1 g)
- 1/2 medium banana, sliced, optional (60 g)
- 2 tablespoons chopped roasted peanuts, optional (16 g)
Instructions
- Whisk creamy base. In a 16-ounce jar or medium bowl, whisk milk, yogurt, peanut butter, maple syrup, vanilla, and salt with a fork. Keep whisking until the peanut butter is smooth and no yogurt streaks remain.
- Add oats and chia. Stir in the rolled oats and chia seeds, scraping the bottom and sides. Mix until every oat is wet and the mixture looks loose, almost pourable; it will thicken during chilling.
- Rest and restir. Leave the jar uncovered for 5 minutes, then stir again from bottom to top. This brief rest starts the chia hydrating and breaks up clusters before they set. Cover tightly once the mixture looks even.
- Chill overnight. Refrigerate at least 8 hours, keeping the jar level if possible. The oats soften while chia thickens the milk into a creamy base. A loose mixture before chilling is expected, so do not add extra oats yet.
- Stir and adjust. Open the jar and stir from the bottom upward. If it is thicker than you like, add 1 to 2 tablespoons milk, stir, and check again. It should be creamy, loose, and easy to scoop.
- Top and serve. Add banana and peanuts, if using, just before eating. Serve cold from the jar, or use a bowl when you want room for berries, cinnamon, jam, or another splash of milk.
Notes
- Natural peanut butter works, but stir the jar thoroughly before measuring. Separated oil can make finished oats unevenly rich or leave a dry layer at the bottom.
- For multiple servings, multiply ingredients and portion into separate jars after the second stir. Individual jars are easier to loosen with milk and top before eating.
- Fruit is best added at serving time, since it releases moisture and softens during storage.
