Ingredients

  • 2 cups old-fashioned rolled oats (180 g)
  • 1 cup pumpkin puree (245 g)
  • 1 1/2 cups whole milk (360 g)
  • 1 cup plain Greek yogurt (245 g)
  • 3 tablespoons maple syrup (60 g)
  • 2 tablespoons chia seeds (24 g)
  • 1 teaspoon ground cinnamon (3 g)
  • 1/2 teaspoon ground ginger (1 g)
  • 1/4 teaspoon ground nutmeg (1 g)
  • 1 teaspoon vanilla extract (5 g)
  • 1/4 teaspoon fine salt (1 g)
  • 1/2 cup toasted pecans (55 g)

Instructions

  1. Prepare. Whisk pumpkin puree, milk, yogurt, maple syrup, vanilla, cinnamon, ginger, nutmeg and salt in a large bowl until the color is even and no spice streaks remain. Add the rolled oats and chia seeds. Fold from the bottom until every oat is coated and suspended through the pumpkin mixture rather than sitting in a dry raft.
  2. Assemble. Divide the mixture among four 12-ounce jars. Leave at least 1 inch of headroom for stirring and toppings, wipe the rims and cover. Refrigerate for 8 hours. The mixture will look looser than finished oats at this stage, but the pumpkin and chia need that free liquid for a spoonable result by morning.
  3. Cook or chill. Stir one chilled jar from bottom to top. The oats are ready when they mound softly on a spoon, the base remains glossy and no watery edge circles the jar. If the mixture is too firm, add 1 tablespoon milk. If it looks loose, wait another 30 minutes before changing the ratio; hydration continues after stirring.
  4. Finish. Add toasted pecans and a small yogurt swirl just before serving so the nuts keep their snap. For a Tuesday breakfast, carry the pecans in a separate small container and stir them in at the desk. The jars need no cooking, and their wide openings make it easy to scrape up the thicker pumpkin mixture near the bottom.

Notes

  • Use the clear lidded breakfast jar and preserve the weights. Center cue: the oats after eight hours, thick enough to mound softly on a spoon with no watery edge.
  • Refrigerate for up to 4 days. Reheat one portion for 45 seconds, check the center and add brief bursts if needed.
